Head Chef
Chef grew up on the East coast cooking with his mother and grandmother. He moved to Alaska in the late nineties where he began cooking at Sacks Cafe now Crush.
Sacks was a culinary playground of talented chefs, great ingredients and a wonderful learning environment. The opportunity to open his own restaurant presented itself and he opened South Restaurant. After the success of South Chef opened Sounders Roadhouse and Coffeehouse where he continued to learn and expand knowledge of the use of local ingredients and worked with various chefs who shaped the cook he is today.
For the last several years he has enjoyed working at some extraordinary remote lodges and private yachts where he has continued the pursuit of food and the love of the outdoors.
In his spare time he enjoys everything outside from skiing, scuba diving, fishing to foraging.

BREAKFAST
A bountiful and hearty spread of fruit, breakfast meats, house-baked goods, made-to-order eggs, daily specialty items, fruit juice, cocoa, tea, and gourmet coffee are served to get you ready for a fun day of activities.LUNCH
While out on your days adventures, you will enjoy a picnic lunch consisting of a delicious sandwich made to order, fresh veggies, picnic salads, and soup to warm you on the cooler days.Chips and all the snacks, treats, gourmet cookies, and beverages you could want will also be provided. We are more than happy to customize your lunch to accommodate your dietary needs.
DINNER
Evenings are for unwinding—sharing the day’s adventures with fellow guests, planning tomorrow’s activities, and enjoying delicious appetizers. Dinner features a gourmet plated meal prepared by our talented chef, paired with house wine, and finished with a decadent dessert. Our menus showcase fresh Alaskan seafood, high-quality steaks, chicken, and pork.Please let our staff know before arrival about any dietary restrictions or allergies so we can accommodate your needs.
After dinner, relax at the bar, take in the sunset from the dock, or gather around the campfire, weather permitting.
DRINKS
Enjoy available snacks, treats, and beverages, plus two glasses of house wine each day. For something extra, visit the Fat Bear Lounge—our one-of-a-kind yurt bar offering full service in a cozy setting, where beer, spirits, and specialty wine can be purchased.
